Spinach vs. Baby Spinach
Spinach and Baby Spinach both come from the same leafy green plant. Regular spinach grows to maturity and is then picked, lightly rinsed and tied together in bunches. Spinach sold in bunches needs to be washed to remove any soil debris prior to cooking and eating.
Baby Spinach is picked when the leaves grow to 2 to 3 inches and the stems are short. You'll find baby spinach packaged in square plastic containers after it's been washed and dried. Baby spinach usually doesn't require washing before cooking and eating, but it's always a good idea to wash greens before your cook them.

Storage
Unless you are making an arugula salad for four, it's unlikely that you'll use up all the arugula. Leafy greens tend to spoil easily. One trick I learned is to place a paper towel in the container with my salad greens in the refrigerator.
Placing a paper towel in the container helps to absorb the moisture and keeps the leaves dry and fresh.
These ingredients don't stand up well to freezing.
Top Tips
For a tasty and sweet strawberry salad dressing, use frozen strawberries. Remember to take them out of the freezer and thaw them. Dress the salad just before serving.
Make your own pralines by melting granulated sugar in a saucepan and adding pecans once the sugar is melted. Let cool on parchment paper, then clean off any excess sugar.
Substitutions and Variations
Here are some variations and substitutions to consider:
- Heat - bring on the heat by adding chili to your dressing
- Date Paste - replace the brown sugar with date paste or maple syrup for a natural sweetness
- Red Peppers - add summer vegetables like peppers.
- Pecans - replace the pralines with unsweetened pecans or roasted and salted pistachios
