Traditional Cucumber Tomato Salad

Whether you call this Cucumber Tomato Salad or Italian Tomato Salad, either one will include crunchy cucumbers, vine ripened tomatoes that are so sweet and juicy.

This salad is low carb and can be transformed into a caprese salad with a few additional ingredients.

This cucumber and tomato salad can be made any time of the year, but tastes so much better with sweet fresh tomatoes and fresh cucumbers from the garden.

If you don't have a garden, no worries, because fresh tomatoes and cucumbers are readily available at the market. Just let your tomatoes sit out for a couple of days before you use them to finish ripening up.

This Mediterranean salad was inspired by this Tuna and Tomato Salad which is a great option if you want to add a little protein in your salad or if you want a quick take to work lunch.

Pulled Pork is the perfect main dish to serve with a side of this Mediterranean Cucumber and Tomato Salad.

Ingredients

This salad is made with a few simple ingredients and then tossed in a large bowl.

  • vine ripened tomatoes
  • extra virgin olive oil
  • cucumber
  • dried oregano
  • white onion or red onion
  • red wine vinegar or lemon juice
  • salt
  • ground pepper
  • fresh basil

How to Make Traditional Cucumber and Tomato Salad

Place the oil, vinegar, pepper and salt in a salad bowl.

Peel and slice cucumber.

Slice the tomato and onion. Place all ingredients in the salad bowl with the dressing.

Toss the salad and top with more oregano and fresh basil leaves. Let stand for 10 minutes and serve.

Best served with a warm loaf of Calabrian bread.

Storage

Unfortunately these ingredients don't stand up well to storage in the refrigerator or freezing. Make just enough to consume in one sitting.

Top Tips

This salad tastes best with ripe tomatoes. If you are buying your tomatoes from the market, likely they would have been picked from the vine before they had the chance to fully ripen.

Leave your tomatoes out for a couple of days so that they finish to ripen, then store them in the fridge to keep them fresh.

Substitutions and Variations

There are a few ways to make this cucumber and tomato salad different, here are a few:

  • Keto Caprese Salad - add buffalo mozzarella or bocconcini to make a tomato bocconcini salad which will also be keto.
  • Vegetables - add green peppers for a crunch or make a spinach and tomato salad, you can also add capers
  • Feta - add feta cheese for an extra Mediterranean Tomato Salad taste
  • Tuna - add tuna for extra protein like this Tuna and Tomato Salad

The best part about this salad is eating fresh bread dipped into the salad dressing on the bottom of your bowl.

Equipment Recommended

For this recipe you will need a large bowl for tossing the fresh cucumber and fresh tomato. You will also need measuring cups and measuring spoons as well as a salad spoon, preferably one without slots.

Ingredients
  

  • 3 Tomatoes cut into quarters, then each quarter cut in half
  • 1 Cucumber sliced
  • ½ tsp oregano
  • ½ tsp salt
  • ½ onion
  • 2 tbsp red wine vinegar
  • 4 tbsp olive oil
  • Pepper to taste
  • 3 Fresh Basil Leaves

Instructions
 

  • In a large salad bowl mix oil, vinegar, salt and pepper.
  • Wash and cut tomatoes into slices and place them in the salad bowl
  • Wash, peel and cut the cucumber into slices and place in the salad bowl with the tomatoes.
  • Slice the onion thinly and place on top of the tomatoes and cucumbers.
  • Add dried oregano and fresh basil
  • Toss and serve with a warm loaf of bread
