Mediterranean Tomato Cucumber Salad

Whether you call this Mediterranean Tomato Cucumber Salad or Italian Tomato Salad, either one will include vine ripened tomatoes, sweet tomatoes and juicy tomatoes. This salad is low carb and can be transformed into a caprese salad with a few additional ingredients.

Ingredients

  • 3 Tomatoes
  • 1 Cucumber
  • ½ teaspoon of oregano
  • ½ teaspoon salt
  • ½ red or white onion
  • 2 tablespoons of red wine vinegar or lemon juice
  • 4 tablespoons olive oil
  • Pepper to taste
  • Fresh Basil Leaves
  • 1 cup boconcini or buffalo mozzarella optional

Instructions

  • In a large salad bowl mix oil, vinegar, salt and pepper.
  • Wash and cut tomatoes into slices and place them in the salad bowl
  • Wash, peel and cut the cucumber into slices and place in the salad bowl with the tomatoes.
  • Slice the onion thinly and place on top of the tomatoes and cucumbers.
  • Add dried oregano and fresh basil
  • Toss and serve.

Note that nutrition information does not include boconcini or buffalo mozzarella.
