Nothing pairs better with savory goat cheese than something tart like cranberry sauce. This is a great way to use up leftover cranberry sauce after the holiday season.

Although, you don't need to wait until after the holidays to make these cranberry goat cheese rolls because you will find the ingredients readily available at the grocery store.
This was inspired by a sweet dessert my mother usually makes around the holidays called calabrese pitta mpigliata. This dish is made with raisins and candied fruit and spread over a thin layer of sweet pasta.

Ingredients
These cranberry goat cheese puff pastry rolls aren't made with a lot of ingredients. They are simple and easy to make using the following:
- Goat Cheese
- Cranberry Sauce or jam
- Frozen Puff Pastry
- Butter
- Rosemary
- Garlic

Instructions
Heat oven to 400°F. Thaw out the puff pastry as per box directions and roll out onto a smooth surface.
Melt butter in a small bowl, add chopped garlic and rosemary. Brush melted butter mixture over the puff pastry
Spoon about ½ tablespoon of goat cheese on the edge of the puff pastry until you have created 8 mounds of goat cheese evenly spread out between each other.
Lightly spread the cranberry sauce over the puff pastry sheet.
Cut the roll evenly into 8 rolls and arrange in a baking dish. Leave space as they will expand as they bake. Start rolling the puff pastry from the side where you have placed the goat cheese.
Brush lightly with any remaining butter mixture. Sprinkle more rosemary on top.
Bake for 30 minutes or until golden.
Hint: remember to take your puff pastry out of the freezer at least 30 minutes before you are ready to use it. Before you start, preheat the oven so that it is ready as soon as you are done preparing the cranberry goat cheese puff pastry rolls.
Substitutions and Variations
These cranberry goat cheese puff pastry rolls are sweet and savory. Here is some inspiration for other ways to make these rolls:
- Cinnamon Buns - use the puff pastry to make cinnamon buns
- Hazelnut Spread - use hazelnut spread in place of the goat cheese and cranberry
- Garlic Rolls - eliminate the cranberry and goat cheese and just make garlic rolls

Storage
Store leftovers of these puff pastry rolls covered with plastic wrap in the dish you baked it in or in an airtight container. They will keep well covered in the refrigerator for 4 to 5 days and taste best warmed up in the microwave.
These ingredients don't stand up well to freezing.
