This healthy Berry Protein Chia Pudding is a great healthy breakfast for those of you who struggle to put a breakfast together in the morning. I like to make this protein chia pudding the night before.
The chia seed with milk rest overnight and soak up the liquid and expand into a pudding like consistency. By the time morning comes along it has thickened to a "pudding" like consistency. Hence, why it is called chia seed pudding.

I usually make my Chia Pudding with frozen fruit just because it is more convenient, but this berry chia seed pudding can be made any time of the year with fresh or frozen fruit.

Why is Chia Pudding so Healthy?
Chia pudding is so healthy because it contains 3 major food groups for healthy, nutritious meals. You have Chia Seeds which contain Omega-3 healthy fats, a good source of plant based protein, fiber, magnesium and potassium.
Milk which is a good source of protein and vitamin D, and protein powder or collagen which is also a good source of protein.
You can make this chia pudding healthier, by adding a vegetable to fully complete your meal template.

A few ingredients is all you need for this recipe to come together.
- chia seeds
- protein powder or collagen
- milk or unsweetened almond milk (make your own with this recipe)
- fruit

How to Make Protein Chia Pudding
You can make this the night before, like you would make overnight oats. If you forget, don't worry because you can also make this in the morning.
Stir the chia seeds, almond milk and your protein powder together and then top with your favorite fruit or jam.
Let it site overnight or for about 30 minutes. You can warm it up, or eat it at room temperature.
Flavor Combinations for Chia Pudding
You can substitute any flavor of protein powder and fruit for the raspberries to make any combination you desire.
Some examples are:
- Chocolate protein powder and banana
- Vanilla protein powder and strawberries or raspberries, with a sprinkle of graham cracker crumbs
- Vanilla protein powder and apples, with a sprinkle of cinnamon and brown sugar
- Vanilla protein powder, lime juice, unsweetened coconut and a wedge of lime
- Chia seed with oat milk, or chia seed with almond milk, or even regular cow's milk
- Added sweeteners like maple syrup, honey or stevia (if using unflavored protein powder)
Just use your imagination!
Making the Tastiest Protein Chia Seed Pudding
Fresh or Frozen Fruit
Just a note that I prefer to use frozen strawberries in this recipe for Berry Chia Seed Pudding because I always have them on hand. However, you can swap out frozen strawberries for fresh. When you use frozen fruit, the fruit releases water as it thaws out. This is good because the "pudding" has a more fluid consistency and isn't so thick and dense. Therefore, if you prefer to use fresh berries, add a little more milk so that the chia seed pudding is not so dense.
How to Choose a Protein Powder for Chia Pudding
A lot of people are not familiar with protein powder. Particularly if you don’t workout. Their is no magic knowledge needed to pick the best protein powder. It really depends on what you are looking for in a protein powder. Some people buy protein powders as a meal supplement while others buy a protein powder to simply supplement their protein in take.
And when you consider the type of protein, well, the possibilities are virtually endless. From vegan to vegetarian to whey to soy and the list goes on and on. When picking out a protein powder, just choose one that you think you will use regularly. And, if you are really not interested in using protein powder, just substitute the protein powder for collagen, a regular yogurt or greek style yogurt.
This is the exact protein powder that I used. Sometimes I use an unflavored collagen powder like this Leanfit Plant Based Vanilla Protein Powder, which has pea protein as an ingredient.
Keep these things in mind when purchasing protein powder:
- Dietary Restrictions - choose a protein powder that fits your eating habits (whey, plant based/vegan, vegetarian, animal)
- Added Sugars - you may or may not want added sugars in your powder, check the ingredient list
- Calories - look at the nutrition content to determine if the protein is more a meal replacement type or to build muscle
- Flavor - buy a protein powder that tastes good, get samples if possible. You can also find unflavored protein powders.
- Cost - try and find the most cost effective powders, wait for sales
Mixing the Ingredients and Equipment Needed to Make Chia Pudding
I find it handy to use a mini whisk to combine the protein powder, chia seeds and milk to make this chia seed pudding. The whisk helps to prevent lumps from forming from the protein powder.
It's best to make this pudding in small mason jars and let it rest overnight. But, if you forgot or didn't plan on making this you can combine the milk, chia seeds and protein powder and microwave for about 40 seconds. If needed let is stand for 10 minutes while you do something else.

Healthy Chia Seed Pudding

- 1 scoop vanilla protein powder Leanfit or preferred protein powder
- ¾ cups milk or almond milk
- 2 tablespoons chia seeds
- 1 tablespoon shredded unsweetened coconut optional
- ½ cups frozen strawberries or other berry
Instructions
- Place the chia seed in a small bowl or glass. Add the protein powder and milk.
- Mix well. (I use a mini whisk to combine everything so that there are no clumps.) Add frozen raspberries (no need to stir at this point). Add coconut or any other toppings you desire.
- Let stand for an hour or refrigerate overnight. Microwave for about 40 seconds at a time, if you prefer to eat your chia seed pudding warm.
