This Whole30 Egg Salad Sweet Potato sandwich can be made for breakfast, lunch or any meal of the day. Not only is this egg salad sandwich grain free, but it is also gluten free and made with wholesome ingredients.
The sweet potatoes make a perfect substitute for bread, not to mention that the combination of sweet potato and egg salad go great together!
These egg salad sweet potato sandwiches are so quick to put together, especially if you have hard boiled eggs on hand.
This recipe was inspired by my meal planning for Melissa Urban's Whole30 program, and pairs well with this amazing Arugula, Pear and Prosciutto Salad. There have been many mornings when I have had this combination of an egg salad sandwich with a salad. I know it may sound weird, but the sweet pears in the salad makes a perfect meal for the morning combined with these egg salad sweet potato sandwich.
Prosciutto Egg Cups are also a great option for a grab and go breakfast and can be made in advance for the whole week.

You probably have the ingredients to make this dish in your pantry and fridge right now.

- Green Onion
- Eggs
- Mayonnaise

Instructions
Boiling eggs in advance is a definite time saver. In fact, you could also steam the sweet potatoes in advance as well and have both egg and sweet potato ready to make this sandwich when you are feeling hangry!
I made my own mayonnaise using avocado oil and it was really easy to make. Check back in the near future for recipe details on my homemade mayonnaise recipe.
This sandwich is so easy to make. Just mash up your egg add seasoning and mayonnaise and then put it on top of each sweet potato half.
Hint: Sweet potatoes that aren't overcooked work best for this egg salad sandwich. I find that the longer sweet potatoes cook, the sweeter they become. Personally, I don't like to have too much of a sweet tasting "bun" with my egg salad.

Substitutions and Variations
Here are some great substitutions and variations to make this recipe your own or to kick it up a notch.
- Sweet Potato - instead of using sweet potato, you could use a regular yellow potato, lettuce, jicama, palmini or virtually anything as your vessel.
- Binder - use relish or fresh mashed up avocado instead of mayonnaise
- Tuna/Salmon - substitute the egg with chicken, tuna or salmon
- Spice - add hot sauce, or chili peppers to spice things up
Of course if you are not following Whole30, you can use another type of gluten free bun or even regular bread.
Make this your own by incorporating your own ingredients.
Reflection: Cooking is like science, you need to experiment with different combinations to come up with the perfect result (for you). But, don't worry if it's not perfect. Pat yourself on the back for trying, you deserve it! Just try and figure out what you did wrong and do it different next time.

Storage
If you are planning to make the eggs and sweet potato in advance, they will keep well in a sealed container for 3 to 4 days. Once the sweet potato sandwiches are assembled, eat immediately.
These ingredients don't stand up well to freezing.

Top tip

Egg Salad Sweet Potato Boats

- 1 medium sweet potato
- 2 eggs boiled
- 1 tablespoon of mayonnaise
- ⅛ cup of chopped green onion
- salt and pepper to taste
- microgreens optional
Instructions
- Cut your sweet potato horizontally and steam according to your microwave instructions. (usually 2-3 minutes)
- While the sweet potato is steaming, peel your hard boiled eggs and place them in a small bowl.
- Mash your eggs.
- Add the salt, pepper, green onion and mayonnaise.
- Top the egg salad mixture on your sweet potato halves.
- Top with microgreens, optional.
