Ingredients
- 3 tbsp olive oil
- 1 clove garlic
- 14 oz pork sausage 4 links of sausage
- ⅓ cup tomato puree
- 4 cups beef broth
- 1 carrot peeled and diced
- 1 lb tortellini cheese or meat
- 2 cups kale stem removed and chopped
- salt and pepper to taste
Instructions
- Remove sausage from casing. Separate it in to chunks using your hands. Set aside.14 oz pork sausage
- Heat up olive oil and medium heat and cook garlic until fragrant. Add sausage and brown.3 tbsp olive oil, 1 clove garlic
- Add tomato puree and mix well with the sausage. Let simmer for 5 minutes.⅓ cup tomato puree
- Add broth and diced carrots, bring to boil and let simmer for about 20 minutes covered.4 cups beef broth, 1 carrot
- Taste soup to see if it needs for seasoning.salt and pepper
- While the broth simmers, bring another pot of water to boil, add salt and cook tortellini. You'll know they are cooked when they float to the surface, about 3 to 4 minutes. Once cooked add them to the soup mixture.1 lb tortellini
- Add kale and let simmer for 5 minutes.2 cups kale
- Serve with caution as it will be hot.
