Tortellini come in different varieties and the filling often depends on the region you are in.

Here's a breakdown:

  1. Cheese Filled Tortellini - usually made with ricotta, parmesan, romano, or a mix of Italian cheeses.
  2. Meat Filled Tortellini - traditional in Emilia-Romagna and often filled with prosciutto, mortadella, pork, or veal, combined with cheese like Parmiggiano-Reggiano.
  3. Vegetable Filled Tortellini - often filled with spinach and ricotta, mushroom or pumpkin or squash.
  4. Herb Infused or Gourmet Tortellini - filled with basil pesto, sun-dried tomatoes or truffle flavored variations and found in specialty shops.

Ingredients

You won't need much to make Sausage Tortellini Soup. Here's what you'll need: olive oil, garlic, pork sausage, tomato puree, beef broth, carrots, tortellini, kale and seasoning.

How to Make Sausage Tortellini Soup

Prepare by removing sausage from casing. Separate it in to chunks using your hands. Set aside.

Heat up olive oil and medium heat and cook garlic until fragrant. Add sausage and brown.

Add tomato puree and mix well with the sausage. Let simmer for 5 minutes.

Add broth and diced carrots, bring to boil and let simmer for about 20 minutes covered.
Taste soup to see if it needs for seasoning.

While the broth simmers, bring another pot of water to boil, add salt and cook tortellini. You'll know they are cooked when they float to the surface, about 3 to 4 minutes. Once cooked add them to the soup mixture.

Add kale and let simmer for 5 minutes.

Storage:

This soup stores well. Keep in mind that pasta absorbs liquid so you will want to store the tortellini separate from the soup, then add it back in when re-heating.

Re-heat on stove top or microwave.

To freeze, separate the pasta from the soup, then add the tortellini back in when re-heating. This will avoid the pasta soaking up all the liquid.

Boil tortellini separately so that they do not soak up the broth.

  • 1 clove garlic
  • 14 oz pork sausage 4 links of sausage
  • ⅓ cup tomato puree
  • 4 cups beef broth
  • 1 carrot peeled and diced
  • 1 lb tortellini cheese or meat
  • 2 cups kale stem removed and chopped
  • salt and pepper to taste

Instructions
