This Leftover Turkey Soup Recipe is a great way to use up that dry leftover turkey sitting in your fridge. In a large stock pot sauté the white onion in olive oil until translucent.
Add cubed turkey and bones if on hand. Let simmer for 10 minutes.
Add broth until the turkey is submerged in liquid and bring to boil.
Add diced potatoes and carrots, bay leaves, ground pepper and sage. Let simmer for 20 minutes.
Add green peas and continue to simmer for 30 minutes.
Add additional seasoning (salt, pepper, vegetable seasoning) to taste.
Remove from heat and let sit for 10 minutes before serving.
