Ingredients
- 2 tbsp olive oil
- 1 cup diced onions
- 2 cups cooked turkey diced
- 2-3 turkey bones optional
- 4 cups chicken broth
- 1 ½ cups carrots diced
- 1 ½ cups potatoes diced
- 1 ½ cups green peas
- 2 bay leaves
- ½ tsp ground sage
- salt and pepper
- vegetable seasoning if needed
Instructions
- In a large stock pot sauté the white onion in olive oil until translucent.
- Add cubed turkey and bones if on hand. Let simmer for 10 minutes.
- Add broth until the turkey is submerged in liquid and bring to boil.
- Add diced potatoes and carrots, bay leaves, ground pepper and sage. Let simmer for 20 minutes.
- Add green peas and continue to simmer for 30 minutes.
- Add additional seasoning (salt, pepper, vegetable seasoning) to taste.
- Remove from heat and let sit for 10 minutes before serving.
Notes
Top Tips
To avoid over seasoning food always taste test prior to serving. Add seasoning to taste at the very end to avoid over salting your food. If your soup is to salty, you can always try one of these remedies on How to Fix Salty Food. Do not serve the soup immediately, let it cool down for at least 10 minutes before serving it.
