This leftover Turkey Soup Recipe is a great way to use up that dry leftover turkey sitting in your fridge. After all, once the holidays are over, it's hard to look at your leftovers the same way you did the day you made them, right?
Just add a few ingredients from your pantry and freezer and you have a brand new meal for dinner. This leftover turkey soup recipe not only hits the spot on a cold winter's day, but is hearty, healthy and uses wholesome ingredients.
This is a great recipe to use up leftover turkey made at Thanksgiving or Christmas.
This recipe was inspired by a commitment I made to myself to eat healthier unprocessed foods. Not only is the recipes Whole30 compatible, but it's just as good as my beef stew recipe.
Ingredients
You can use almost anything in your pantry or in your vegetable drawer to make this recipe for turkey soup. Here are the ingredients I used:
- leftover turkey meat and bones
- olive oil
- white onion
- seasoning
- carrots
- green peas
- potatoes
- chicken broth

Instructions
Place olive oil in a large stock pot and sauté your onions.
Take out your leftover turkey from the fridge and place it on a cutting board, cut the meat from the bone and then cube it into bite sized pieces.
Add your turkey pieces to the pot including any carcass pieces, e.g. drumstick. (If needed tie the carcass pieces together so that you can scoop them out easily).
Add chicken stock liquid or cubes and water.
Cube your vegetables. Add the carrots and potatoes to the pot. Add seasoning and bay leaves. Simmer for about 20 minutes, then add green peas.
Continue to simmer for another 30 minutes.

Taste broth and if needed add salt, pepper or vegetable seasoning to your liking. Remove pot from stove and let site for 10 minutes before serving.

Substitutions
This recipe is designed to be Whole30 compatible. Here are some substitutions whether you are doing Whole30 or not.
Whole30 Substitutions:
- Vegetables - instead of carrots and peas, you can use leafy greens like spinach or kale or add slicked tomatoes.
- Potatoes - use purple or sweet potatoes instead of yellow potatoes.
- Turkey - substitute baked salmon or white fish for turkey pieces.
- Broth - instead of using chicken broth, use a vegetable broth.
Non-Whole30 Substitution Ideas:
- Potatoes - instead of using potatoes, substitute with cooked rice or pasta (couscous, pastina, tubini), any small pasta
- Vegetables - substitute the green peas and carrots with corn

Storage
Store leftovers in the fridge in a air tight container for a maximum of 2 to 3 days.
You can also freeze leftovers in the freezer for up to a month. Just thaw out in the fridge for 24 hours before warming up and serving.

Top tip
Do not serve the soup immediately, let it cool down for at least 10 minutes before serving it. By letting it cool down, you will avoid burning your tongue or esophagus and you will be able to happily enjoy your meal.

- 2 tablespoons olive oil
- 1 cup diced onions
- 2 cups cooked turkey diced
- 2-3 turkey bones/carcass optional
- 4 cups chicken broth
- 1 ½ cups diced carrots

Instructions

- Add broth until the turkey is submerged in liquid and bring to boil.
- Add diced potatoes and carrots, bay leaves, ground pepper and sage. Let simmer for 20 minutes.
- Add green peas and continue to simmer for 30 minutes.
- Add additional seasoning (salt, pepper, vegetable seasoning) to taste.
- Remove from heat and let sit for 10 minutes before serving.
