Wash the asparagus and cut the tough bottom white ends of the spears off. Place in a bowl and toss with olive oil.
15 oz asparagus
Parboil the asparagus for about 5 minutes or until tender. Rinse under cold water to stop them from cooking any further. Place in a bowl and toss with olive oil.
1 tbsp olive oil
Cut the prosciutto slices in half.
6 slices prosciutto
Lay prosciutto slice flat on a clean surface and place 3 to 4 spears on one side and roll up the prosciutto and spears together slightly shifting the spears diagonally so that the prosciutto covers more of the asparagus spears.
Place spears on a baking sheet covered with parchment paper and bake at 350° F for 20 minutes or until tender.
Notes
Top tip
To reserve the prosciutto, cut the slices in half. Use half of a slice to roll up 3 to 4 asparagus spears. This will ensure that you have enough prosciutto slices for all the asparagus.
