Plain asparagus isn't that much fun, but Asparagus Wrapped in Prosciutto will make you love asparagus so much that it will be your favorite vegetable side dish.

In Canada, asparagus is available all year round at the market. Being able to purchase asparagus, makes this recipe for asparagus perfect for any time of the year.
This was inspired by my sauteed brussel sprouts with bacon , and pairs well with this roasted chicken dinner.

How to Make Asparagus Wrapped in Prosciutto
Wash your asparagus.
Place them on a cutting board and cut off the hard white sections at the bottom. Par boil them for about 5 minutes or until tender.
Lay about 3 to 4 asparagus spears across the prosciutto and then roll up the prosciutto and spears together shifting the spears slightly so that the prosciutto covers the spears diagonally.
Transfer the spears to a baking sheet covered with parchment paper. Spray with a little olive oil. Once all the asparagus spears have been transferred to the baking sheet, place them in the oven at 350° F for 20 minutes or until tender.
Top tip
To reserve the prosciutto, cut the slices in half. Use half of a slice to roll up 3 to 4 asparagus spears. This will ensure that you have enough prosciutto slices for all the asparagus.
Substitutions and Variations
Here are a few ways to make this dish different.
- Prosciutto - instead of prosciutto, use black forest ham or bacon.
- Cheese - use mozzarella slices or provolone slices either with the prosciutto or as a substitute for the prosciutto. Sprinkle parmesan on top for a little added kick.
- Vegetarian - don't add deli meat and make this totally vegan.
- Heat - add some heat like chili flakes

Leftovers will store well in air tight containers for 3 to 4 days.
You can also freeze leftovers. When you are ready to eat them, thaw them out in the refrigerator for 24 hours. Then warm them up in the microwave.

- 6 slices prosciutto
