- 112 grams Dark Semi Sweet Chocolate
- 1 cup Peanuts (shelled, roasted and skin removed)
- ¾ cup Shredded Sweetened Coconut
Line a baking sheet with parchment paper and set aside.
Chop chocolate and place in a small bowl large enough to hold all ingredients. Melt chocolate in the microwave or double boiler.
Add peanuts and shredded coconut to the melted chocolate a little at a time alternating between the two ingredients until finished. Mix in between additions.
Using a small scoop, scoop out the mixture and place on baking sheet lined with parchment paper. Sprinkle a little shredded coconut on each one for decoration.
Let cool for at least 2 hours at room temperature.
Store any leftover in an airtight container in a cool place.
