How to Melt Chocolate
Always use good quality chocolate, particularly if you are going to melt it. There are a few different methods to melt chocolate from which to choose from.
- Microwave Method - cut the chocolate up as finely as possible and place it in a glass bowl. Place the bowl in the microwave and microwave on high in 20 second intervals. Stir and repeat until the majority of the chocolate has melted. Continue to stir until all the chocolate has melted. Do not overheat.
- Double Boiler Method - cut the chocolate up as finely as possible and place it in a glass bowl large enough to rest on top of a pot without falling in. Fill the pot with with 1 to 2 inches of water making sure that the water will not touch the glass bowl. Bring the water to a boil and rest the glass bowl filled with chocolate on the pot. Stir continually until the chocolate has melted.
- Baine Marie Method - cut the chocolate up as finely as possible and place it in a jar. Place the jar into a pot and pour water into the pot around the jar. Pour enough water to come up half way the height of the jar. Remove the jar and bring the water to a boil, return the jar into the pot. Make sure that the water does not go into the jar. Lower the heat to a gentle boil and stir the chocolate until it has melted.
My favorite method for melting chocolate is the microwave method because it involves less equipment and is quick. Regardless of which method you choose the outcome will be the same. You just need to be comfortable with the method for melting chocolate that you use.
Ingredients
You'll need the following ingredients to make these Crunchy Nut Chocolate clusters:
- Good quality chocolate
- Shredded Coconut
- Roasted Peanuts

Instructions
Line a baking sheet with parchment paper and set aside.
Add peanuts and shredded coconut to the melted chocolate a little at a time alternating between the two ingredients until finished. Mix in between additions.
Chop chocolate and place in a small bowl large enough to hold all ingredients. Melt chocolate in the microwave or double boiler.

Using a small scoop, scoop out the mixture and place on baking sheet lined with parchment paper. Sprinkle a little shredded coconut on each one for decoration.
Let cool for at least 2 hours at room temperature.
Hint: If you are using the microwave to melt your chocolate, make sure that you are warming the chocolate in 20 second intervals and stirring the chocolate at each interval. Return the chocolate to the microwave until melted. Do not over heat!

Store dried chocolate nut clusters in an air tight container in a cool place. Consume within 2 to 3 weeks.
I have never frozen these crunchy chocolate nut clusters before so I can not recommend freezing. Freeze at your own risk.
