Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced onions
  • 2 cups cooked turkey diced
  • 2-3 turkey bones/carcass optional
  • 4 cups chicken broth
  • 1 ½ cups diced carrots
  • 1 ½ cups diced potatoes
  • 1 ½ cups green peas
  • 2 bay leaves
  • ½ teaspoon ground sage
  • pepper to taste
  • salt to taste
  • vegetable seasoning if needed

Instructions

  • In a large stock pot sauté the white onion in olive oil until translucent.
  • Add cubed turkey and bones if on hand. Let simmer for 10 minutes.
  • Add broth until the turkey is submerged in liquid and bring to boil.
  • Add diced potatoes and carrots, bay leaves, ground pepper and sage. Let simmer for 20 minutes.
  • Add green peas and continue to simmer for 30 minutes.
  • Add additional seasoning (salt, pepper, vegetable seasoning) to taste.
  • Remove from heat and let sit for 10 minutes before serving.
