Crust

2 cups graham cracker crumbs
⅓ cups sugar
½ cups butter melted

Cheesecake

17½ oz Cream Cheese about 2 packages of 250g
½ cup sugar
1 ¾ cup whipping cream
1 tbsp vanilla extract

Instructions

Crust

Melt butter and mix with graham cracker crumbs and sugar.
2 cups graham cracker crumbs, ⅓ cups sugar, ½ cups butter
Place the graham cracker mixture in a springform pan and using a wide bottom glass press it against the bottom.
Freeze for 10 minutes while you make the filling

Cream Cheese Filling

Beat cream cheese and sugar until softened
17½ oz Cream Cheese, ½ cup sugar
Add vanilla extract and only 1 cup of the whipping cream a little at a time and mix. Scrape bowl between additions.
1 ¾ cup whipping cream, 1 tbsp vanilla extract
Using another bowl whip the remaining ¾ cup of whipping cream until stiff but not overwhipped.
Fold the whipped cream in the cream cheese mixture.
Use a spatula to transfer the cream cheese to the springform pan. Spread it carefully so not to disturb the graham cracker crust.
Refrigerate for 6 to 12 hours.

Notes

Top Tips

You'll be able to enjoy this cake after it chills in the fridge for one hour. Although the consistency will be mousse like.

For a denser consistency let rest in the refrigerator for 6 to 8 hours.
