Ingredients
This salmon with mango salsa is made with wholesome ingredients, starting with fresh salmon fillets and:
- Fresh or Frozen Salmon Fillets
- Salt
- Pepper
- Olive Oil
- Mango (fresh or frozen)
- Sweet Red Bell Pepper
- Red Onion
- Lime Juice or Rice Vinegar
- Cilantro

What's the Difference between Salmon Fillets and Salmon Steak
Salmon fillets are cut parallel to the spine and are long and thin. Fillets done contain the little spines which means eating salmon fillets is slightly mor enjoyable than it's counterpart. Salmon fillets are more delicate in texture.
Salmon steaks are cut across the bone and are thicker and usually have a hole in the middle where the spine was. Salmon steaks can be more robust in flavor when the bone is still attached to the steak but can be more challenging to eat with all the spines.
For the most part, they are interchangeable in use and fillets, depending on the size, can sometimes serve more than one person.
How to Make Salmon with Mango Salsa
Defrost or cube ripe mango, chop red pepper and chop red onion.
Mix together and add lime juice, salt, pepper and cilantro. Let sit while you bake the salmon.
It doesn't matter whether you leave salmon skin on or off. In fact, it's more tasty with it on and helps prevent the salmon from drying out. Season your salmon and place it on a baking sheet to bake or air fry salmon.
Top your salmon with the mango salsa and your favorite vegetable.
Storage
The salmon and mango salsa will store fairly well for a few days. Just place it in an airtight container stored separately.
You can also freeze the salmon if you know you won't be eating it in the next few days. Store it in an airtight container that can easily go from freezer to microwave.
It's not recommend that you freeze the mango salsa.
Top tip
In this recipe, I like to use frozen mangos. Frozen mangos are guaranteed to be sweet and ripe which makes it perfect for salsa recipes.
Substitutions and Variations
Here are some ideas on how to make this salmon recipe slightly different. Switch it up by using:
- Hot Peppers - instead of using sweet peppers, use hot chili peppers for a hot and spicy mango salsa
- Avocado - add avocado for a creamy texture to your mango salsa

Salmon
- 24 oz Salmon Fillets 4 pieces
- salt and pepper to taste
- 1 tbsp olive oil
Mango Salsa
- 1 cup mango cubed
- ½ cup red bell pepper chopped
- ½ small red onion chopped
- 2 sprigs cilantro
- 2 tbsp lime juice
- 3 tbsp olive oil
- salt and pepper to taste
Instructions
- Preheat oven or air fryer to 425 degrees F.
- Cube the mango or defrost if using frozen mango.1 cup mango cubed
- Chop red onion and pepper. Combine. Add oil, lime juice and cilantro and mix well. Let sit.1 tbsp olive oil, ½ cup red bell pepper, ½ small red onion, 2 sprigs cilantro, 2 tbsp lime juice, salt and pepper
- Season salmon with olive oil, salt and pepper. Bake or air fry for 8 to 10 minutes or until done. (Cook time will depend on size and thickness of your salmon)24 oz Salmon Fillets, salt and pepper, 3 tbsp olive oil
