Italian Style Egg Rice was another dish my mother made. Both quick and easy to make and great tasting to boot! It's amazing how simple ingredients tasted so wonderful.

Mom always had a way to make the most great tasting dishes in literally minutes. This recipe for egg rice can be made any time of the year either for dinner or lunch or even a take to work lunch.

To make this Italian style egg rice you'll need rice, egg, parmesan cheese, salt and parsley.

What's the Difference between Arborio Rice and Long Grain Rice

Arborio rice and long grain rice differ in several key aspects, including their texture, usage, and cooking characteristics.

Arborio rice is short and plump while long grain rice is long and thin. Arborio rice is high in starch that gives it a creamy texture which makes it perfect for dishes like risotto. Long Grain rice on the other hand is lower in starch which makes it fluffier and less sticky.

Arborio rice is usually cooked slowly and gradually over the stove top adding liquid a bit at a time so that it can absorb the flavors. While long grain rice is usually boiled or steamed with a set amount of water.

How to Make Italian Style Egg Rice

Measure out and prepare your ingredients.

In a stock post boil rice until cooked, drain but do not rinse.

Drain but do not rinse.

Return to stove at low heat and add eggs. Stirring to combine but do not cook the eggs fully.

Add cheese and parsley and stir.

Serve immediately.

Storage: any leftovers can be stored in an airtight container in the fridge for 3 to 4 days.

A great way to use leftover egg rice is to make Arancini di Riso.

Top Tips

When adding the eggs, try to avoid cooking them all the way through making them egg scramble.

You can return the pot to the stove and continue to cook on low or even turn off the stove at this point.

You want the egg to be slightly runny. Of course, if you are squeamish about eating raw egg, then you'll want to cook the egg all the way through. Although the taste will be slightly different.

Substitutions and Variations

This egg rice is perfect as is, but here are some ways you can make it different:

  • Marinara Sauce - add tomato sauce for a marinara style egg rice.
  • Vegetables - add vegetables like peas or spinach
  • Cream - add cream for a creamy version

  • 1¾ cups arborio rice or Italian style rice
  • 4 eggs
  • ⅓ cup parmesan cheese
  • 4 sprigs parsley fresh parsley or 4 tablespoons frozen
