Cleaning Squid
You can skim the cleaning by buying cleaned squid. This way you don't have to do this yourself.
But if you do get courageous, and you do buy whole squid, do the following to clean them:
- pull the head off
- cut the head off just below the tentacles but above the "eye".
- keep the tentacles
- discard the eye
- reach into squid cavity and slide out the entails and remove the purple membrane.
- rinse away any slime
Or you can watch a video on cleaning calamari.
How to Make Grilled Calamari
Start by cleaning your squid or use store bought cleaned squid.
Place cleaned calamari on a cutting board.
Detach the head but leave the body intact.
Place cleaned calamari in a bowl and add all ingredients. Place in fridge for 30 minutes to marinate.
For best results grill on barbecue on high for about 2 minutes on each side. Once cooked place in a clean bowl and add a touch more olive, lemon juice and parsley.
Storage:
Store any leftovers in an airtight container in the fridges for not longer than 3 days.
You can also freeze. When ready to use thaw out in fridge overnight. Grilled squid with marinade tastes very good without warming up.
Take care not to warm up the grilled squid too much because it will end up tasting rubbery.
Top Tips
You can also score the squid prior to marinating as this will allow the flavors of the marinade to penetrate into the squid.
Once cooked, you can cut the squid body width wise to make grilled calamari rings.

Substitutions and Variations
Here are some variations when making grilled squid:
- Spice - add a bit of spice to your marinade
- Shellfish - incorporate shellfish like shrimp and scallops
- Salad - turn your grilled squid into a salad, the longer it sits marinated in the fridge, the better it tastes
