Do you need a waffle cone maker to make ice cream waffle cones?
The short answer is no you don't need a cone mold at all.
The pizzelle cookies will remain soft while they are still warm.
With a little bit of finessing, you can shape the warm pizzelle into a cone shaped waffle that looks the same as an ice cream waffle cone.
Sometimes it's trial and error
Making the perfect pizzelle shape takes a little bit of trial and error.
The placement of the dough can make a difference on how far out the dough spreads across the pizzelle plates.
The thickness of the batter can also make a difference on how easily the batter spreads with a spoon.
You can also try a piping bag to pipe out the batter on the pizzelle plates.

This recipe for pizzelle waffle cones is made using the following ingredients: egg whites, melted butter, granulated sugar, brown sugar, all purpose flour, cocoa powder, vanilla extract, cinnamon and chocolate chips.

How to Make Pizzelle Ice Cream Waffle Cones
Warm up your Italian pizzelle electric griddle while you mix together your ingredients.

Mix the wet ingredients in a small bowl.
Add the sugar and mix.
In a separate bowl mix remaining dry ingredients. Add the dry ingredients to the wet ingredients a little at a time until you reach a thick but spreadable batter.

Warm up your pizzelle maker. Grease with a little bit of butter using paper towel or a basting brush.
Place 2 tbsp of batter in the center of the pizzelle and close the pizzelle maker. Cook for 1 to 1½ minutes until light golden brown.

Using an offset spatula or dull knife remove the hot pizzelle and carefully roll it keeping it tight on one end and loose on the other end to form a cone shape with the seam side down. Try to make the hole on narrow end as small as possible.
Hold it on the seam until it firms up a little bit then place on a cooling rack seam side down to fully cool down.

Once cooled, if the holes are too big, you can melt some chocolate chips and dip the end of the cone in the chocolate to close the hole so ice cream doesn't seep out. You can even place a few inside the cone for a surprise!
Storage:
Once the cones are at room temperature, you can place them in a single layer in an airtight container until you are ready to use them.
Freezing waffle cones is not recommended.
Top Tips
Remove the warm pizzelle from the pizzelle iron with a dull knife or offset spatula and place on a clean surface.
You'll be able to mold the pizzelle while it remains warm, work quickly to shape it in to a cone shape.
As it cools it will firm up. Place it on a wire rack with the seam down to cool.
Substitutions and Variations
Here are some great variations to try:
- Decorate the edges - dip the edges in to melted chocolate and decorate with chopped peanuts, sprinkles, or crushed chocolate covered candy
- Lemon - add lemon zest or orange zest to the pizzelle batter
- Ice cream waffle bowls- used a small curved bowl to make pizzelle waffle ice cream bowls, add fruit to the bowls and a scoop of ice cream
- Cannoli shells are also another great way to shape pizzelle and then fill with a creamy ricotta filling.
