This is one of those desserts that I bring to every gathering and quite honestly, I’m asked to bring it! I bring this dessert to church functions, family gatherings, cookouts, and anything else I’m asked to attend!
I’m a newbie to loving cherry pie. As of a few years back, I had never even had a cherry pie. I know, it’s crazy, right!? But when I fell in love with baking, I told myself I needed to try one, and I instantly fell in love! I have made several different versions of this recipe, and this one is my favorite.

I love to use frozen cherries because I think it makes the process easier, and they taste just as yummy as fresh ones (in my opinion). It also lets me buy a lot at one time, and they don’t go bad so quickly. I also use pre-made crust because it simplifies the recipe, and I am all about making things as easy and simple as possible!
Tips & Tricks for Making this Easy Cherry Pie Recipe
Preparing the Cherry Filling
- The first thing I do before making this pie is laying out the cherries to thaw for about an hour. Having the cherries thawed helps to dry them out quicker, you will want to strain excess liquid

- Also, if you freeze your pie crusts, you need to go ahead and let them thaw out before trying to use them. Otherwise, it will be a mess trying to roll them out and put them in the pie dish!
- You will need to place the cherries in a saucepan over medium to high heat. Cover. Allow the cherries to lose a good amount of juice before removing them from the heat. Note that this can take several minutes.
- In a mixing bowl, mix together the sugar and the cornstarch. Pour this mixture into the cherries once they have been removed from the heat, and mix well. Stir in the almond extract. Return the mixture to low heat and stir frequently until the mixture begins to thicken.

Assembling Your Pie
- If you bought pre-made pie crusts and you put them in the freezer, you need to go ahead and let them thaw out before trying to use them. Otherwise, it will be a mess trying to roll them out and put them in the pie dish!
- Once your cherries are ready, you can pour the filling on top of the bottom crust.
- Then take the top layer and place it on top of the filling and go around the plate and pinch the rim of the plate either using your fingers or using a fork.
- Once you have assembled your pie and topped the pie with the second crust, you can sprinkle some sugar on the top before baking to add a little crunch and it will make it look pretty when it comes out of the oven!
Baking Your Pie and Eating it Too!
Place the piece in the oven for about 50 to 60 minutes at 375°F until the crust is golden brown.
Remove from oven and let cool down for 60 minutes before placing it in the fridge to chill.
Home made pie is best served warm, however cutting it is messy. Serve with a scoop of vanilla ice cream for the ultimate indulgence.

Easy Cherry Pie Recipe
Ingredients
- 4 cups frozen dark sweet cherries
- 1 ½ cups sugar
- 5 tbsp corn starch
- ¼ tsp almond extract
- 1 tbsp butter to dot
- 2 pie crusts I use Pillsbury ready to bake pie crust

- Preheat the oven to 375 degrees Fahrenheit.

- Remove the mixture from the heat and allow it to cool. If the mixture becomes too thick, add a little water. Prepare the crust according to the directions on the box. Once the mixture has cooled, pour it into the crust.
- Dot the mixture with butter. Place the second crust on top and flute the edge of the pie. Make a slit in the middle of the pie to allow the steam to escape. Bake for 50 minutes, remove from the oven and allow it to cool before serving.
