Easy Cherry Pie Recipe

This is one of those desserts that is so easy to make that people will believe that you spent hours in the kitchen putting it together. With a few ready made products, this pie will be ready in 1 hour. Just let it cool down before you sink your teeth into it!

Ingredients

  • 4 cups frozen dark sweet cherries
  • 1 ½ cups sugar
  • 5 tbsp corn starch
  • ¼ tsp almond extract
  • 1 tbsp butter to dot
  • 2 pie crusts I use Pillsbury ready to bake pie crust

Instructions

  • Preheat the oven to 375 degrees Fahrenheit.
  • Place the cherries in a saucepan over medium to high heat. Cover. Allow the cherries to lose a good amount of juice before removing them from the heat. Note that this can take several minutes.
  • In a mixing bowl, mix together the sugar and the cornstarch. Pour this mixture into the cherries once they have been removed from the heat, and mix well. Stir in the almond extract. Return the mixture to low heat and stir frequently until the mixture begins to thicken.
  • Remove the mixture from the heat and allow it to cool. If the mixture becomes too thick, add a little water. Prepare the crust according to the directions on the box. Once the mixture has cooled, pour it into the crust.
  • Dot the mixture with butter. Place the second crust on top and flute the edge of the pie. Make a slit in the middle of the pie to allow the steam to escape. Bake for 50 minutes, remove from the oven and allow it to cool before serving.
