Vanilla Ice Cream a mild tasting ice cream is used in this recipe to compliment the chocolate sandwiches and to mimic the original.

Eggs are used to help bind the cake mix ingredients during the baking process.

Possible Ingredient Substitutions

Here are some ingredient substitutions to make these cake mix ice cream sandwiches diet friendly:

  • Dairy-Free Ice Cream: If you prefer a dairy-free option, you can substitute regular ice cream with plant-based alternatives made from coconut milk, almond milk, or soy milk.
  • Gluten-Free Cookies: For those with gluten sensitivities or dietary restrictions, use gluten-free cake mix instead of traditional cake mix. Look for gluten-free recipes or store-bought options that suit your preferences.
  • Vegan Butter or Coconut Oil: Replace regular butter with vegan butter or melted coconut oil in the recipe for a plant-based alternative that still provides the desired texture and flavor.
  • Egg Substitute: use an egg substitute for a vegan option.

The perfect recipe isn't that far away. I'd love to know how you substituted ingredients to fit your dietary needs. Drop a comment below and let me know!

Variations of Chocolate Cake Mix Ice Cream Sandwich Cookies

You can take a traditional ice cream sandwich made with chocolate cake mix cookies and change up the ingredients for a twist:

  • Ice Cream Flavor: use a different ice cream flavor, like chocolate chip, or mint chocolate!
  • Use cookies - use store bought cookies, like chocolate chip, oatmeal cookies or double chocolate cookies for a quick turnaround.
  • Dip the edges in chocolate - melt some white or dark chocolate and dip half the cookie in chocolate for a chocolate delight!

If you can think of any other way to make this seafood risotto dish unique, go for it!

Equipment

Equipment plays a large role when baking. Non stick baking sheets, parchment paper or silicone baking sheets come in handy when baking any cookies. Not only does this equipment make for easy cleanup, but it makes an impact on the appearance of the final product by avoiding cookies getting stuck to baking pans.

Measuring spoons and a cup also come in handy if you don't have these already

Storage

It will come as no surprise to hear that these cookies store very well! If you do not consume there right away, remember to wrap them in parchment paper.

Store in freezer wrapped and contained in large freezer bags for not longer than 3 weeks to avoid freezer burn.
