Blueberry Streusel Muffins

Blueberry Streusel Muffins are absolutely delicious especially when topped with a traditional streusel topping. It's the perfect ingredient combination that will send you over top while they fill your kitchen with the delicate smell of butter and blueberry notes.

These muffins make a perfect grab and go breakfast or snack option that will satisfy your sweet tooth. The buttery streusel topping adds a perfect contrast of texture and flavor to these moist and tender muffins.

Ingredients You'll Need

You will need the following ingredients to make blueberry streusel muffins: flour, vanilla extract, cornstarch, ricotta, milk, oil, cinnamon, brown sugar, baking soda, egg, butter, and salt.

  • blueberries - add a tangy burst of flavor
  • ricotta - ads a moisture to these irresistible muffins
  • cinnamon - boosts the flavor of the muffin
  • vanilla extract - enhances the flavor by adding vanilla notes to the muffin batter

Why add Ricotta to Muffins?

That's a good question. When we add ricotta to a baked good it brings a richness and delicate texture. Ricotta makes baked goods moist and tender.

There's no exception with these blueberry muffins with ricotta. And as it turns out the cheese brings a delicate tenderness that says eat more!

If you don't have ricotta on hand you can substitute full fat greek yogurt. Use ¾ of greek yogurt for every 1 cup of ricotta.

How to Make Blueberry Streusel Muffins

Preheat oven to 375 degrees. Line muffin tray with muffin liners.

Combine the dry ingredients

Combine the wet ingredients, except blueberries.

Incorporate the dry ingredients into the wet ingredients using a spatula.

Reserve about ¼ cup of the blueberries for later. Fold the remaining blueberries into the batter, using a spatula, just enough to incorporate. Do not over mix otherwise your batter will turn blue. Evenly scoop the batter into the muffin liners.

In a small bowl mix the ingredients of the streusel topping together except the butter. Soften the butter and incorporate it into the dry ingredients until it clumps up easily. Use your hands or a fork.

Using a spoon scoop the streusel mixture on top of each muffin. Repeat until all the muffins have been topped with the mixture. Top with reserved blueberries.

For small muffins, bake for about 20 minutes or until a toothpick inserted comes out fairly dry.
For large muffins, bake for about 25 to 27 minutes.
Do not over cook. Remove from oven and let cool for about 15 minutes.

Storage

These blueberry muffins can be stored in the refrigerator wrapped tightly. 

You can even store them in the freezer for about a month.  When you are ready to use them, you can take them out and either thaw them out in the fridge or at room temperature. 

Top Tips

Use blueberries that are frozen, do not thaw otherwise they will be melted and contain a lot of liquid and turn the batter blue

When adding them to the batter, add them as the last ingredient and incorporate them only to evenly distribute them in the batter. Do not overmix as they will turn the batter blue.

Possible Ingredient Substitutions

  • Whole wheat flour - Instead of using all-purpose flour, try using whole wheat flour for a healthier option.
  • Other berries - Swap the blueberries for raspberries, cranberries or chopped strawberries if you prefer a different berry flavor.
  • Vegan - For a vegan version, replace the eggs with a flax or chia seed egg substitute.
  • Almond flour - use almond flour or a gluten free flour for a gluten free option
  • Fresh blueberries - use fresh berries instead of frozen

Answers to Commonly Asked Questions

What's the difference between crumble and streusel?

Crumble and streusel are both toppings made from flour, butter, and sugar. The main difference is that crumble usually contains oats, while streusel does not. Crumble is often used as a topping for fruit-based desserts, while streusel is more commonly used on pastries like coffee cakes and muffins.

Can you use frozen blueberries?

Yes, you can use frozen blueberries in muffins. In fact, they tend to hold their shape better during baking and can create a nice burst of juice and flavor in the muffins. However, keep in mind that frozen blueberries may slightly increase the baking time of the muffins. Be sure to gently fold them into the batter while still frozen to prevent them from bleeding too much into the batter.

Can I freeze muffins with streusel topping?

Ingredients
  

Muffin

  • 2 cups all purpose flour
  • 1 tbsp corn starch
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ¾ cup sugar
  • 2 egg
  • ½ cup ricotta drained
  • ¼ cup milk
  • ⅓ cup oil
  • 1 tsp vanilla
  • 1½ cups blueberries frozen

Topping

  • 1 cup all purpose flour
  • ½ cup brown sugar
  • ¼ cup sugar
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ¼ cup butter softened

Instructions
 

  • Preheat oven to 375 degrees. Line muffin tray with muffin liners. Using two medium sized bowls place the egg and sugar in one bowl and all the dry ingredients in another bowl.
  • Mix the egg and sugar in a medium sized bowl. In another bowl combine and mix all the dry ingredients, except blueberries.
  • Add remaining wet ingredients to the egg and sugar and mix. Incorporate the dry ingredients in to the wet ingredients, except blueberries.
  • It's time to make the streusel topping. In a small bowl mix the ingredients of the topping together except the butter. Soften the butter and incorporate it into the dry ingredients until it clumps up easily. Use your hands or a fork.
