Preheat oven to 350 degrees. Place eggs in a bowl and whisk until fluffy.
Pour mixture into an 8" x 8" baking dish. Strategically place remaining ingredients in the dish. Reserve the basil and a little bit of the shredded cheese for top of casserole. Place sliced tomato on top of egg and then sprinkle remaining shredded cheese on top. Sprinkle reserved basil on top.
Bake for 55 minutes or until a toothpick inserted into the middle comes out dry.

Top Tips
Test that the egg casserole is cooked by inserting a toothpick in to the centre of the dish. If the toothpick comes out clean, then your eggs are cooked.Let stand for 10 minutes before cutting into the casserole and serving to avoid getting a food burn.
