- 1½ lb grape tomatoes
- ½ tsp salt
- 2 tbsp olive oil
- 6½ oz peaches sliced
- 1 tbsp lemon juice
- 2 tbsp honey
- 8½ oz burrata
- 1 cup spring mix or baby spinach
- 1 tbsp balsamic glaze
- 6 basil leaves
- 2 tbsp olive oil for drizzling on top of salad
- ground pepper
Instructions
- In a small bowl mix tomatoes, salt and olive oil. Bake in a toaster oven or oven at 400℉ for 20 minutes or until tender. Remove from oven and set aside.1½ lb grape tomatoes, ½ tsp salt, 2 tbsp olive oil
- In another small bowl, mix peaches, honey and lemon juice. Add tomatoes and basil.6½ oz peaches, 1 tbsp lemon juice, 2 tbsp honey, 6 basil leaves
- Lay spinach or greens on a platter and carefully scoop the tomato mixture on top.1 cup spring mix
- Carefully drain the burrata and place it on the platter either in the middle or on the side.8½ oz burrata
- Drizzle balsamic glaze and more olive oil on top. Add fresh ground pepper.1 tbsp balsamic glaze, 2 tbsp olive oil, ground pepper
- Serve with warm toasted baguette slices.
Notes
Top Tips
Burrata - the burrata is delicate and can easily break. Gently drain the liquid and then carefully place it on your platter. Serving - before serving, break open the burrata by slicing in to it with a sharp knife allowing the creamy inside to flow ooze out on to the tomatoes and peaches. Drizzle - drizzle the top with balsamic glaze, olive oil and freshly ground pepper.Nutrition
