In a small bowl mix tomatoes, salt and olive oil. Bake in a toaster oven or oven at 400℉ for 20 minutes or until tender. Remove from oven and set aside.
Burrata - the burrata is delicate and can easily break. Gently drain the liquid and then carefully place it on your platter.Serving - before serving, break open the burrata by slicing in to it with a sharp knife allowing the creamy inside to flow ooze out on to the tomatoes and peaches.Drizzle - drizzle the top with balsamic glaze, olive oil and freshly ground pepper.
