Air Fryer Zucchini Fries

These air fryer zucchini fries deliver all the texture and flavor of classic zucchini fries, but with significantly less oil. Perfectly crispy on the outside, tender on the the inside - ready in under 20 minutes!

Air Fried Zucchini is another way to consume fresh zucchini picked from your garden. Zucchini Fries are just as tasty as potato fries and with a few ingredients are transformed into a side dish that your kids and family will love. Your kids won't even know that they are eating their veggies!

Ingredients

7 oz Zucchini sliced ¾" thick x 3½" long
½ teaspoon Salt
1 Egg
1 tablespoon Onion Powder
1 tablespoon Garlic Powder
¼ cup olive oil plus some oil for spraying
ground pepper to taste
¼ cup parmesan cheese
¾ cup Breadcrumbs if using seasoned breadcrumbs, eliminate salt, onion powder, garlic powder parmesan cheese and oregano.
¼ teaspoon dried oregano Optional

Instructions

Cut zucchini in strips not longer than 4 inches and sprinkle with salt. Let sit for 30 minutes. Salt will pull excess water from zucchini.

Set the zucchini in a strainer, and set the strainer over top a bowl to catch any drippings. Pat zucchini dry with paper towel.
In a small bowl, mix egg and the oil.
1 Egg, ¼ cup olive oil
In a shallow plate mix breadcrumbs, onion powder, garlic powder, ground pepper, and parmesan cheese.

Dip the zucchini into the egg wash. Then dip in the breadcrumb mixture and pat the mixture onto the fries.
Transfer and place in a single layer on an air fryer basket. Spray fries with cooking oil.
Cook in air fryer for 20 to 25 minutes at 425 degrees F. (You may need to cook in batches if your air fryer compartment is small)
Sprinkle dried oregano on top for added flavor.

Notes

Top Tips

If you are using seasoned breadcrumbs, do not use any extra salt and reduce the amount of parmesan cheese.

Oven Baked Zucchini Fries

The oven is a great alternative. Simple place your breaded zucchini strips on a parchment-lined baking sheet, spray them lightly with cooking oil, and bake at 425 degrees F for 20 to 25 minutes, flipping halfway through.

For extra crispiness, place them on a wire rack over the baking sheet to allow hot air to circulate around them. You can also use the broiler for the last 1-2 minutes for added golden crunch.
