- 1 tsp vanilla extract
- 1 Lemon zest 1 lemon
- ½ lemon juiced
- 1 cup shortening crisco
- 3 ½ cups all purpose flour 31/2 to 4 cups flour
- 4 tsp baking powder
Instructions

- Mix together egg and sugar. Add milk, vanilla extract, lemon juice and lemon zest. Melt the shortening until it is liquid and let it cool somewhat before adding it to the mixture (you don't want it to cook the egg).
- Add flour to mixture a little bit at a time, when you can't mix it any more by hand roll it out onto a floured surface and continue to incorporate flour as needed until you reach a consistency that isn't sticky.
- Roll into a ball and using a knife or dough scraper, divide the dough into 6 slices.
- Roll out each slice into about 1 inch roll and cut into 4 to 5 inch pieces. Take each piece and shape it into an S then place it on a baking sheet lined with parchment paper.
- Bake for about 10 to 15 minutes or until tops are golden. Be careful to keep an eye on the cookie bottoms that they don't burn.
