Mom's Italian Potato and Tomato Salad Recipe

Summer in Canada always meant that there were plenty vine ripe tomatoes which are the perfect ingredient for Italian Potato and Tomato Salad Recipe.

To this day, my parents still grow a vegetable garden during summertime with home grown vegetables like zucchini, eggplant and tomatoes.

We always had so many tomatoes and zucchini that mom always needed to be creative on how to use them up. One of my favorite dishes fluffy zucchini fritters was on the table often and they were scrumptious!

How to Make Potato Salad

This Italian potato and tomato salad is super easy to make and comes together in minutes.

Boil, peel and slice your potatoes.

Add herbs, onion and dressing. Best left to sit for a while to marinate.

Storage: This tomato and potato salad is best eaten immediately. Storage of leftovers not recommended due to the fact that the acidity of the vinegar will eat away at the tomatoes.

Peel potatoes after you have boiled them and let cool down. Then slice and add to your bowl. Mom says that if you peel them before boiling, you'll take away any protein they have and since they have very little protein it's best to leave the skin on during boiling.

Substitutions and Variations

Here are a few suggestions that will give your potato and tomato salad a little kick:

  • Kalamata Olives - add kalamata olives
  • Green Beans - substitute green beans for the tomatoes or add them to the salad!
  • Protein - make this simple salad the perfect lunch able by adding a protein like tuna or chicken

Let the potatoes cool so that they are easier to peel and add them to the bowl while they are still warm to absorb some of the dressing.

How do you keep potatoes from getting mushy in potato salad?

Don't overcook the potatoes. Cook until tender, but not falling apart. Let them cool before adding dressing.

Is it better to boil potatoes whole or cut for potato salad?

Starchy potatoes should be cooked with the peel on and try to use medium sized potatoes not large ones.

Ingredients
  

  • 20 oz tomatoes about 2 medium, preferably beefsteak or heirloom, chopped but not seeded
  • 24 oz potatoes about 4 medium, peeled and sliced
  • 1 White Onions sliced
  • 4 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic minced
  • 3 fresh basil leaves chopped
  • ½ tsp dried oregano
  • salt and pepper

Instructions
 

  • Boil potatoes whole with skin on. Let cool, peel and chop. Place in a bowl.
  • Chop tomatoes but do not seed them (that's the best part and keeps the tomato juicy).
  • Add sliced onions, chopped garlic, olive oil and vinegar. Season as per your preference with salt and pepper. Add herbs like oregano and fresh basil leaves.
  • Let sit to marinates and serve and eat on the same day.
