There is a uniqueness about the taste of brined chicken wings. Once you have had brined wings, you will want to brine them every time before you cook them.
Many recipes call for kosher salt when brining wings. But don't worry, you can use regular table salt if you don't have kosher salt.
What are Brined Chicken Wings?

How Long Can You Brine Chicken Wings?
You can brine chicken wings anywhere between 2 to 24 hours. Keep in mind that the longer the meat stays in a brine the more risk of it becoming chewy and stringy instead of tender. Also note that you wouldn't leave a piece of raw meat sitting in the fridge for longer than a day or two without it being consumed.
Follow your regions guidelines for food safety when storing meats.
How do you Cook Brined Chicken Wings?
The great thing about brining chicken wings or any meats is that you can cook brined meats any way you like. Here are a few ways you can cook brined meats:
- Fried chicken wings
- Chicken wings smoked
- Air Fryer Chicken Wings
- Grilled Chicken Wings
- Baked Dry Rub Chicken Wings
This recipe was inspired by Dry Rub Chicken Wings. What better way to get a crispy tasty wing than by brining your chicken wings overnight or for a couple of hours.
Top off your cooked wings with a side of Eggplant and Zucchini and a delicious Ricotta Dessert.

Instructions on How to Brine Chicken Wings
You can use fresh or frozen wings. Note that frozen wings take longer to brine because they need to thaw before cooking. But essentially, you can thaw and brine your meat at the same time.
So if you are in a hurry, use thawed chicken wings.

Combine all ingredients, except wings, in a bowl and stir to combine. Pour in a container large enough to hold the brining liquid and wings.
Place wings in the container and pour brining liquid over the wings. Cover and store in the refrigerator for 2 to 24 hours.

Pat dry your wings with paper towel before seasoning and cook as you usually would using your favorite chicken wing recipe.
Top tip
Scoop the chicken wings out of the brining liquid and pat them dry thoroughly with paper towel. Dry wings will make for crispy wings.
Hint: Don't be afraid to pat dry your wings with paper towel.
Substitutions and Variations
Here are some great ideas on how to make this recipe different:
- Chicken Drum Sticks - substitute chicken drum sticks instead of chicken wings
- Pork Back Ribs - Use pork ribs instead of chicken wings
- Pork Chops - Use pork chops instead of chicken wings
- Whole Chicken - brine a whole chicken before roasting or cooking it on a rotisserie
