This easy Peach Burrata Salad is made using simple ingredients like grape tomatoes, salt, olive oil, peaches, lemon juice, honey, burrata cheese, baby spinach or spring mix salad, balsamic glaze, fresh basil and fresh ground pepper.

How to Make Peach Burrata Salad

If you roast the tomatoes ahead of time, this salad will take about 10 minutes to make.

In a small bowl mix tomatoes, salt and olive oil. Bake in a toaster oven or oven at 400℉ for 20 minutes or until tender. Remove from oven and set aside.

In another small bowl, mix peaches, honey and lemon juice.

Add tomatoes and basil. Mix well.

Lay spinach or greens on a platter and carefully scoop the tomato mixture on top.

Carefully drain the burrata and place it on the platter either in the middle or on the side.

Drizzle balsamic glaze and more olive oil on top. Add fresh ground pepper.

Storage:

Like many other salads, this peach burrata salad should be consumed the day it is made. Leftovers do not store well as the tomatoes will release moisture the longer they sit creating a soupy texture.

Freezing is not recommended.

Top Tips

Burrata - the burrata is delicate and can easily break. Gently drain the liquid and then carefully place it on your platter.

Serving - before serving, break open the burrata by slicing in to it with a sharp knife allowing the creamy inside to ooze out on to the tomatoes and peaches.

Drizzle - drizzle the top with balsamic glaze, olive oil and freshly ground pepper.

Substitutions and Variations

Here are some great ideas for variations of this peach burrata salad.

  • Tomatoes - use sliced heirloom tomatoes or regular sliced tomatoes instead of miniature tomatoes
  • Prosciutto- add prosciutto slices rolled up and strategically placed on your platter
  • Heat- add a some hot chili oil or hot pepper flakes for a little bit of heat

  • 6½ oz peaches sliced

  • 1 cup spring mix or baby spinach
  • 1 tbsp balsamic glaze
  • 6 basil leaves
  • 2 tbsp olive oil for drizzling on top of salad
