Thin slices of prosciutto are pan-friend until golden and crisp, then tossed with caramelized onions, pasta, olive oil and parmesan for a simple yet flavorful Italian-inspired dinner!

For this crispy prosciutto pasta you'll need: prosciutto slices, pasta, onions, olive oil, parmesan cheese, salt, parsley and broth.

How to Make Crispy Prosciutto Pasta

This prosciutto pasta dish comes together in less than 30 minutes and your family will love it!

In a medium skillet heat up some olive oil. Layer the prosciutto in single layers and crisp on both sides. Remove from pan and set on a plate lined with a paper towel to absorb any oil.

Bring a pot of water to boil and add salt and pasta. Cook pasta al dente.
Add more olive oil to the skillet and heat up. Add sliced onions and sauté until they are caramelized.

Add broth or cream, bring to boil, then simmer for 5 minutes. Turn heat off and set aside.

Reserve some pasta water and place cooked pasta in the skillet with onions and broth (or cream). Add cheese. Take the slices of prosciutto and break them into pieces and add them to the pasta. Toss the pasta in the mixture quickly. If the pasta is to dry add pasta water.

Garnish with parsley and serve immediately.

Storage:

Leftover pasta with crispy prosciutto can be stored in an airtight container refrigerated for up to 4 days. Heat up on stove top to crisp the prosciutto up again.

Freezing this pasta dish is not recommended.

Save some pasta water to help create a silky sauce

Add Prosciutto just before serving and toss pasta quickly with the prosciutto so flavors meld

Finish with fresh herbs like parsley or basil for brightness

Substitutions and Variations

Here are some suggested substitutions and variations for ingredients:

  • Prosciutto- instead of prosciutto used pancetta or bacon
  • Peas, spinach or asparagus - add some vegetables for a veggie boost
  • Pecorino Romano - use pecorino roman instead of parmesan cheese

Ingredients
  

  • 4 slices prosciutto
  • 1 tbsp olive oil
  • 2 small onions about 8 oz, sliced thinly
  • 3 tbsp olive oil
  • ¾ cup chicken broth or any broth or full fat cream
  • 14 oz pasta 400 grams
  • ¼ tsp salt
  • ½ cup pasta water reserved
  • ⅓ cup parmesan cheese grated
  • 3 stalks parsley garnish

Instructions
