What to Serve with Tuscan Chicken

Tuscan chicken is a flavorful dish and the best part is that there's a lot of liquid that comes with making this dish. Here are some ideas for side dishes:

  • twice cooked baked potatoes
  • mashed potatoes
  • rice
  • roasted brussel sprouts
  • grilled vegetables with white balsamic vinaigrette

How to Make Creamy Tuscan Chicken

Heat olive oil in pan and sauté garlic, add onion and sauté until translucent.

Season chicken and place in pan and brown on both sides until cooked. Transfer to another plate.

Add sun dried tomatoes, spinach, cream and parmesan cheese. Stir to combine. Let simmer for 10 minutes.

Return chicken to pan and simmer until chicken is warmed through. Remove from heat and serve.

Storage

Store leftovers in a microwave safe bowl in the refrigerator for not longer than 3 days.

I've never frozen Tuscan Chicken using coconut cream, so I can't recommend freezing it. Freeze at your own risk.

Top Tips

Using frozen chopped kale and boneless chicken breast or chicken breast pieces in this creamy Tuscan chicken recipe will make prepping this meal even quicker.

Whether you use fresh or frozen chicken, consider removing the skin from the chicken. This will reduce fat consumption and is easier than having to cut away the chicken skin while you eat.

Non Dairy Substitutions:
Cheese - chopped cashews
Cream - full fat coconut milk (Add at the very end once chicken is in skillet and warm. Do not simmer or bring to boil as coconut cream will curdle)

Substitutions and Variations

This Tuscan Chicken recipe is a one pot meal that is low carb and gluten free. Spice up the dish by considering one of these variations or substitutions:

  • Kalamata Olives - add salty kalamata olives to this dish for a salty kick
  • Kale - substitute kale or another leafy green in this chicken dish
  • Pasta Sauce - serve over pasta
  • Chicken Legs - substitute skinless chicken legs for chicken breast
  • Dairy Cream - if you follow a non dairy diet use coconut cream instead of full fat cream and chopped cashews instead of parmesan cheese
  • Cherry Tomatoes - If you don't have sun-dried tomatoes on hand you can substitute them with a few more cherry tomatoes

Equipment

Equipment plays an important part in the cooking results. Make sure that you have a good quality large non stick skillet. Wooden spatulas are especially important to use when cooking in a skillet because they will not scratch your skillet coating. Also thongs come in handy for transferring larger items, like chicken, from skillet to dinner plate.

  • 1½ cups full fat cream
  • ¼ cup parmesan cheese
  • 2 cups baby spinach

Instructions
