Sweet Potato French Fries

- 3 Sweet Potatoes
- 2 Teaspoons of Potato Starch
- 1 Teaspoon salt
- 1 Teaspoon of Dried Oregano
- 1 clove of garlic
Preheat oven to 425°F.
Wash and dry your potatoes
Slice lengthwise about ¼ inch, then lay slices down on cutting board and cut into about ¼ sticks.
Put your potatoes in a large bowl.
Mix the starch/flour into the potatoes until the potatoes are evenly covered.
Coat with the olive oil. Add chopped garlic, toss.
Place the fries on a baking sheet covered with parchment paper, laying them in a single row on the baking sheet lengthwise. Do not over crowd the potatoes otherwise they will steam and you will get a soggy fry.
Bake for 30 minutes or until golden.
Remove from oven and let cool. Add salt and any other seasoning of your choice.
