Whole30 Egg Casserole

Ingredients

  • 1 cup almond milk or non dairy milk for whole30
  • 6 eggs
  • 1 medium tomato
  • 2 ounces prosciutto cut in strips (2 to 3 slices)
  • 2 cups chopped kale frozen
  • 1 teaspoon salt
  • 1 tablespoon potato starch optional (or other compatible starch)
  • ½ teaspoon ground pepper
  • 1 tbsp onion powder
  • 3 fresh basil leaves or dried crushed basil

Instructions

  • Preheat oven to 350°F degrees.
  • Lightly beat the eggs with a fork and pour into a 8 x 8 baking dish. Mix in starch and season with onion powder, salt and pepper.
  • Add chopped kale and spread out evenly.
  • Cut the prosciutto slices and fold them, place them on top of the egg mixture, pushing them down into the egg slightly.
  • Place sliced tomato on top of egg and then place fresh or dried basil on top. Add any other seasoning, e.g. dried oregano, if you like.
  • Bake for 55 minutes or until a toothpick inserted into the middle comes out dry.
