- 1 cup almond milk or non dairy milk for whole30
- 6 eggs
- 1 medium tomato
- 2 ounces prosciutto cut in strips (2 to 3 slices)
- 2 cups chopped kale frozen
- 1 teaspoon salt
- 1 tablespoon potato starch optional (or other compatible starch)
- ½ teaspoon ground pepper
- 1 tbsp onion powder
- 3 fresh basil leaves or dried crushed basil
Preheat oven to 350°F degrees.
Lightly beat the eggs with a fork and pour into a 8 x 8 baking dish. Mix in starch and season with onion powder, salt and pepper.
Add chopped kale and spread out evenly.
Cut the prosciutto slices and fold them, place them on top of the egg mixture, pushing them down into the egg slightly.
Place sliced tomato on top of egg and then place fresh or dried basil on top. Add any other seasoning, e.g. dried oregano, if you like.
Bake for 55 minutes or until a toothpick inserted into the middle comes out dry.
