Egg Salad Sweet Potato Boats

This Egg Salad Sweet Potato sandwich can be made for breakfast, lunch or any meal of the day. Not only is this egg salad sandwich grain free, but it is also gluten free and made with wholesome ingredients.

Ingredients

  • 1 medium sweet potato
  • 2 eggs boiled
  • 1 tablespoon of mayonnaise
  • cup of chopped green onion
  • salt and pepper to taste
  • microgreens optional

Instructions

  • Cut your sweet potato horizontally and steam according to your microwave instructions. (usually 2-3 minutes)
  • While the sweet potato is steaming, peel your hard boiled eggs and place them in a small bowl.
  • Mash your eggs.
  • Add the salt, pepper, green onion and mayonnaise.
  • Top the egg salad mixture on your sweet potato halves.
  • Top with microgreens, optional.
