- 1 medium sweet potato
- 2 eggs boiled
- 1 tablespoon of mayonnaise
- ⅛ cup of chopped green onion
- salt and pepper to taste
- microgreens optional
Cut your sweet potato horizontally and steam according to your microwave instructions. (usually 2-3 minutes)
While the sweet potato is steaming, peel your hard boiled eggs and place them in a small bowl.
Mash your eggs.
Add the salt, pepper, green onion and mayonnaise.
Top the egg salad mixture on your sweet potato halves.
Top with microgreens, optional.
