Avocado Toast with Tomato
Tomato Avocado Toast is a great option if you are running out of things to make for breakfast or lunch. Made with vine ripe tomatoes, ripe avocado and your favorite sourdough bread make it the perfect meal or snack.

- 2 slices of bread
- 1 small Avocado
- Pinch salt
- pepper to taste
- 1 vine ripened tomato
- Pinch of Dried Oregano
- 2 teaspoons olive oil divided
- 1 cup Arugula or leafy greens
- ¼ teaspoon vinegar
Toast your favorite bread to your liking
Slice or mash the avocado and arrange on your bread.
Slice tomato and arrange on top of avocado.
Lightly season arugula with oil and vinegar and toss, set aside.
Spray oil on top of tomato and sprinkle dried oregano, salt and pepper to your liking.
Top with arugula and second slice of bread. Cut in half for easy eating.
Serve immediately.
