Keto Energy Bites

These Keto Energy Bites are so really easy to make and make a great snack whether you are at home, work or on the road.  They are made with wholesome ingredients like nut or seed butter, flax and shredded coconut.

Ingredients

  • 1 cups peanut butter or nut butter melted or softened
  • 6 tbsp shredded coconut optional
  • 3 tsp swerve sweetener optional
  • 6 tbsp ground flaxseed
  • ½ cups chocolate chips, unsweetened optional
  • 1 tbsp Coconut Oil melted
  • 6 tbsp collagen protein or protein powder of your choice

Instructions

  • Place the nut butter in a microwaveable bowl with coconut oil and soften in microwave on high for 20 second intervals.
  • Place the nut butter and coconut oil mixture in a mini food processor and add remaining ingredients. If you don't have a mini food processor, use a bowl large enough to accommodate the remaining ingredients.
  • Mix ingredients until well combined.
  • Measure out bites using a small scoop, pressing contents down before you release the balls onto a tray or plate.
  • Once you have filled the tray, refrigerate the balls for 2 hours.
  • Serve and Enjoy!
  • Store leftovers in the refrigerator or freezer following local food storage guidelines.

Notes

If your mixture is too dense add one tablespoon of melted coconut oil at a time.
If your mixture is too loose add a tablespoon of almond flour at a time until it reaches the consistency that you like.
