Ingredients

Sandwich Cookies

  • 432 grams cake mix 1 box, chocolate flavor or white cake mix + ½ cup of cocoa powder
  • 3 eggs
  • ¼ cup milk
  • ½ cup butter melted
  • 67 ounces Vanilla Ice Cream

Instructions

Sandwich Cookies

  • Pre-heat oven to 350°℉.
  • **Skip this step if you have chocolate cake mix.** Add ½ cup cocoa powder to white cake mix and thoroughly combine.
  • Mix all ingredients together, except milk.
  • Add milk a little bit at a time until the batter forms a dough that you can scoop like cookie dough. Add more milk if needed
  • Scoop dough and place on a baking sheet lined with parchment paper. Try and spread out the dough into a thin circle.
  • Bake for 15 mins or until cookies are firm to touch. Take care not to scorch tops or burn the bottoms.
  • Let cool. If the cookies are not round or have jagged edges, use a cookie cutter or glass tumbler to cutout a circle shape from the cookie. Feed scraps to your family.

Making the Sandwich

  • Cut a slice of ice cream the thickness of the ice cream sandwich filling.
  • Use the same glass tumbler to slice through the ice cream slice and cut out a circle and place it on top of the cake cookie. Or use a spoon to spoon ice cream on top of the cookie and then top it with the second chocolate cookie.
  • Roll side of sandwich in sprinkles and place in freezer to set. Individually wrap them in parchment paper to store them if they will not be consumed immediately.
