Tomato Ricotta Sauce
Now, your probably scratching your head right now thinking tomato sauce and ricotta, really?
Yes, don't knock it until you try it. Believe it or not, these two pair quite nicely. The addition of the ricotta brings a mellow somewhat thick cheesy composition to this dish. Not to mention that it is absolutely delicious.

Fettuccini Alfredo
Interestingly enough, Alfredo Sauce is not the same as Panna Sauce. In fact, the original Alfredo Sauce only contained parmesan cheese and butter. Alfredo sauce as we know it today is merely a "myth".
The original alfredo sauce was served in a restaurant in Rome, Italy by a gentleman who's restaurant was called "da Alfredo". Served as a quick meal.
Naturally, no one would go to a restaurant and ask for pasta with butter and parmesan cheese. However, this is a tasty dish that will crave anyone's hunger just the same.
Today, many busy mothers/parents make this quick dish for their children. A dish that children love and ask for over and over again. In fact, my kids (well they are in their 20s now) make this all of the time to feed their hunger.
This dish can be made with either spaghetti or penne pasta and the more cheese you use the better!

Recipe Details
Servings: 4
Ingredients:
- 450g Pasta of your choice
- Water to boil pasta
- salt to taste (to season water)
Sauce:
- 2 tbsp butter
- â…“ cup Parmesan cheese
- ½ cup reserved pasta water
Instructions:
- Make pasta as per box instructions. Remember to reserve ½ cup past water.
- Drain pasta and return to pot.
- Add butter and stir pasta
- If pasta sticks together add enough pasta water until the pasta loosens up and is easier to mix.
- Serve immediately and top with cheese.
Aglio e Olio Pasta Sauce
This is another quick dish. However with the addition of the garlic, this dish is likely loved more by adults than by children. That is unless you have children that love garlic!
A dish that originated from Naples, Italy traditionally made with olive oil, garlic, chili flakes.
In this recipe I include breadcrumbs as that is what my mom added to the recipe when she made it for us as well as cheese.
Servings: 4
Ingredients:
- 450g Pasta of your choice
- Water to boil pasta
- salt to taste (to season water)
Sauce:
- 3 cloves of garlic, chopped finely
- 1 tsp chili flakes (optional)
- â…“ cup Parmesan cheese
- â…“ cup bread crumbs
- ½ cup oil (your choice)
- ½ cup reserved pasta water
Instructions:
- In a large skillet, sauté the garlic until fragrant
- Add the breadcrumbs and (chili, optional) and stir.
- Make pasta as per box instructions. Remember to reserve ½ cup past water.
- Drain pasta and place in skillet with oil, garlic and breadcrumbs.
- Stir pasta to combine with sauce.
- If pasta sticks together add enough pasta water until the pasta loosens up and is easier to mix.
- Serve immediately and top with cheese.
Reflection: Cooking is like science, you need to experiment with different combinations to come up with the perfect result (for you). But, don't worry if it's not perfect. Pat yourself on the back for trying, you deserve it! Just try and figure out what you did wrong and do it different next time.
